It has been a long, long time since I’ve been here! I got off-balance. There was a LOT going on! But I couldn’t let Thanksgiving come and go without saying something!!
Today I made a Grateful Tree!
The first things written on the leaves that hang on the tree are the names of my children and grandchildren! What a blessing!
Tonight, I had to have some jambalaya! I love it! I thought it might be good for you to have the recipe after all the Thanksgiving food!
Shrimp and Sausage Jambalaya
l lb. smoked sausage
1 c. green pepper (I used half red and half green)
1 c. celery
1 c. onions
1/2 c. green onions
2 cloves garlic, minced
1 c. uncooked rice
2 c. water
1 (14.5 oz.) can tomatoes
1 1/2 lbs. raw shrimp
2 tsp. creole seasoning (it will be pretty spicy, so adjust)
2 T. butter
Slice sausage thinly. Sauté, then drain excess oil. Remove sausage to another dish. Melt butter in large pot. Sauté all the vegetables. Add the sausage, water, tomatoes and seasoning; bring to a boil. Then add rice and cover. Cook for 20 minutes, stirring occasionally. Then add raw shrimp and cook until shrimp are done, stirring occasionally. Serves 6-8.
We are headed out to Arkansas to spend Thanksgiving with my Daddy and our new family and I can’t wait! We’ll head back here and have Thanksgiving with our kids on Saturday. This has been a year full of blessings! I hope that this Thanksgiving season finds you giving thanks for ALL things!
